Ingredients
- 1 Small Sweet Potato Diced Into 1" Pieces
- 1 Tsp Sea Salt
- 4-6oz Choice Of Steak Diced Into 1" Pieces
- 1 Tbsp Olive Oil Divided
- 1 Cloves Garlic Minced
- 1 Bell Pepper Diced Into 1" Pieces
- 1 Green Onion Thinly Sliced
- 2 Tbsp Coconut Aminos
- 2 Tsp Cracked Black Pepper
- 2 Tbsp Fresh Chopped Cilantro
Directions
Dice your sweet potato into cubes and place in a baking sheet. Sprinkle with sea salt, garlic and pepper. Bake for 20-25 mins at 400 degrees. Start this step once your sweet potatoes are finished. Heat your skillet at high heat. Add 1 tablespoon olive oil and garlic. Heat until simmering. Add the steak in a single layer. Cook, turning every two minutes, until the pieces are browned and the center is medium, for about 10 minutes. Splash your aminos over your steak. Add the sweet potatoes and cook until browned, stirring occasionally, for 3-4 minutes. Add the bell pepper and scallion. Sauté, stirring occasionally, until the peppers are bite tender, 3-4 minutes.Add a little sea salt, pepper and cilantro. Toss and remove from heat. Portion onto plates, top with additional fresh cilantro if desired, and serve immediately.
